Ingredients

  • 2 cups diced yellow onion
  • 1 Tbsp olive oil
  • 3/4 cup sour cream
  • 1/4 cup mayo
  • 2 Tbsp minced scallion
  • S&P to taste

Instructions

  • Finely dice the yellow onion and add to a saute pan with a tablespoon of oil over medium heat. Once onion has begun to sweat and soften, reduce heat to medium-low, and cook until fully caramelized, 30-45 minutes. Set aside to cool completely
  • Mix sour cream, mayo, scallion, and cooled caramelized onions until fully combined. Garnish with scallions or extra onion stragglers left from the pan. Serve with chips and veggies.
