These are great for quick on the go breakfasts or afternoon pick me ups. They’re quick to make, store easily, and are the perfect pick-me-up when you need one!
Ingredients
- 1 cup oatmeal (not instant)
- 1/4 cup flax powder
- 1/2 tsp. Vanilla extract
- 1/2 cup peanut butter
- 1/4 cup maple syrup (I used a bourbon barrel aged one)
- 1/3 cup toasted chopped almonds
- 1/4 cup mini chocolate chips
Instructions
- Combine all ingredients into a bowl, and mix thoroughly to combine
- Allow mixture to rest in the fridge for 30-60 minutes. This makes shaping the balls easier!
- Shape a heaping tablespoon of mixture into a ball
- Keep in fridge for up to two weeks

if you're running into issues forming the balls, add a little butter to your hands!
