This is lightyears better than what you buy in the store, and so easy to make! This is usually the first thing to go when I host people at my house- it’s easy to make ahead and everyone likes it. If they don’t, why are you even friends with them?
Ingredients
- 2 cups diced yellow onion
- 1 Tbsp olive oil
- 3/4 cup sour cream
- 1/4 cup mayo
- 2 Tbsp minced scallion
- S&P to taste
Instructions
- Finely dice the yellow onion and add to a saute pan with a tablespoon of oil over medium heat. Once onion has begun to sweat and soften, reduce heat to medium-low, and cook until fully caramelized, 30-45 minutes. Set aside to cool completely
- Mix sour cream, mayo, scallion, and cooled caramelized onions until fully combined. Garnish with scallions or extra onion stragglers left from the pan. Serve with chips and veggies.
